2. My mother's potato salad has ruined me for all others
The main feature? NO SUGAR! Not too much mayo! Plenty of vinegar! Finely-chopped onions, celery and green olives! My own touch: a bit of Dijon! It's one of the few things I make without a recipe, just by feel.

But for Iron Chef purposes, you can just trust me that I would produce a delicious, tangy potato salad with a little crunch and some unexpected olive!!

Very tasty offering from Iron Chef Philly!

4. Garlic Mashed
Peel, cube and put potatoes in pot of cold water. Peel, quarter cloves of garlic (about 1 per pound of potatoes depending on your love of garlic) and add to water. Bring water to a boil and boil 10 to 15 minutes or until soft. Add 1 stick of butter (more or less to taste) a bit of salt (I use only a little salt), a bit of pepper, a 1/2 cup of milk (per pound), mash and serve.

I suppose you could use the potato crust recipe on any other fryable food, like lobster tail or fish fillet, to make it more "Iron Chef".

11. Home fries (New Bedford style)
One pound of chefs potatoes peeled, cubed, and boiled
One pound of (small) Red Bliss potatoes quartered and boiled
One large spanish onion
Kosher salt half teaspoon)
black pepper (half teaspoon)
Butter (two tablespoons
Olive Oil, one tablespoon
Piripiri (chopped hot red pepper preserved in brine)

Heat olive oil in skillet melt butter in hot olive oil
add onions and stir until soft
add potatoes and stir in skillet
add salt, pepper, and piri piri

saute entire mixtured until potatoes turn lightly brown

serve very hot with poached eggs

14. Bake at 350 until tender, while browning one pound cubed round steak...
...in half a stick of butter, with 8 oz. sliced mushrooms, several cloves of garlic, and one diced medium onion. Add one can of beef broth and simmer until the meat is tender and the gravy thickened while adding salt, cumin, and fresh ground black pepper. Pour over potato and eat.

19. Plain old Fried Potatoes
Peel & dice about 4 medium russet potatoes (about 1" cubes)
Slice one onion. Heat your iron skillet on high. Cover bottom of skillet with olive oil, and let it get hot. Add potatoes and onion, salt & pepper, scraping and turning constantly on high for about 10 minutes. Turn heat to med-low, and cook uncovered another 30 minutes or so, occasionally scraping and turning. Blast with high heat at the end for a few minutes and serve when they're crispy on the outside, and some of the onion has turned black.

20. Take the smallest new or fingerling potatoes you can find
(Those oddballs they sell at farmers' markets are great for this.)

Par-boil -- 5-7 minutes for standard new potatoes, 3 minutes for the teeny-tiny ones.
Drain WELL. They need to be as dry as humanly possible.

Heat some olive oil (NOT extra virgin) in a deep pan or skillet. You don't need to cover the potatoes -- 1/2 inch of oil is fine.

Add the potatoes in a single layer (working in batches, if necessary) and fry until the skins are wrinkly.
Drain the potatoes on paper towels; salt while they're still hot.

Serve with alioli if you have it (or can make it).

Appetizer course: Twice Baked Potato Tartlets
Make little tartlet shells. Boil up some spuds and fresh garlic and mash them. Pipe the mashed potatoes into the shells. Add shredded cheese and put under broiler until cheese melts. Sprinkle with chives and garnish with sour cream. (Yes, they're twice baked: the tartlet shells are baked, then the cheese is baked.)

Salad course: Patriotic Potato Salad
Just use any recipe for German potato salad, and put unpeeled red and blue potatoes in it. Yes, there really are blue potatoes. Red potatoes you've seen.

Main course:
Steak Hash a la Simon and Garfunkel: Take an inexpensive steak and slice it into thin strips. Put one tablespoon of vegetable oil and two of extra-virgin olive oil into a saute pan, then drop in the steak strips. Fry it until it's done clear through. Season it with salt, pepper and Tabasco, then fish the steak out of the oil and set it aside. Have a sliced large potato, half a diced onion and a diced clove of garlic stirred together ready when the steak is done. Dump the vegetables in the fat, fry them until done. Season with parsley, sage, rosemary and thyme. Put the steak back in, mix together and put the lid on the pan so the flavor of the meat infuses the vegetables. Cook for five minutes or so. (Or for more oniony flavor in the meat, fry the onions with the meat.) Take the lid off the pan after the five minutes and cook until the potatoes are dry on the surface--a minute or so.

Handmade Salt and Vinegar Chips: Slice potatoes very thin, fry in hot fat until golden, drain, mist with vinegar from a spray bottle while still too hot to touch, add salt.

Green Beans and New Potatoes: Steam fresh green beans, new potatoes and garlic with oregano and fresh-ground white pepper. Add a twist of fresh lemon juice and some butter before serving.

Beverage: Sunrise Over Boise
One shot Blue Ice vodka (made in Rigby, Idaho, from Idaho potatoes), four ounces orange juice, half a teaspoon grenadine. Use any Polish vodka if you can't get Blue Ice.

Dessert: Rocky Mountain Sundae
A big sweet tart shell made with potato flour and beet sugar, filled with vanilla ice cream and topped with strawberries, huckleberries, blueberries, blackberries and raspberries--all fruits that grow in Idaho--and mounds of whipped cream.

On edit: How many burners do they give you? I think that meal would take about three stoves to cook in one hour...

24. French Fries the right way
Wash but do not peel white potatoes.
Cut them into 1/2" thick strips.
Blanch them in peanut oil at 325, remove them when they change color.
Turn up heat to 375 and add the blanched potatoes.
Fry until golden
They will be crisp on the outside and tender inside without being over done.
Add salt and malt vinegar.

Add half a stick of blue bonnet. Add one onion, peeled and finely chopped and add one clove of garlic, smashed. Lightly salt and add a pinch of paprika and cook on medium heat until well done. Serve with French Dressing. Yum.
