Miracle banana bread.

I work at a resort, and when people check out they often leave food, especially if they are flying. Last week a lady brought in a whole green bunch of bananas. With the holiday weekend, no one had time for bananas, and today they were dark brown and ready for the trash. I spotted a box of Aunt Jemima pancake mix unopened on the shelf here at work (another left over), and proceeded to mush up all the bananas into the dry pancake flour (used the whole box) and threw it in an oven in one of the units in a large skillet (which I buttered first).

We waited with some curiosity, but finally forty minutes later, the most delicious light, fluffy, crispy crusted banana bread emerged from the oven. It's just a shame that nobody left any nuts this week!
