Songs sampled most often by rap / hip-hop artists?
I'll start with "Take Me to the Mardi Gras" by Bob James and "Peg" by Steely Dan.

1. Between the Sheets, Good Times, and Atomic Dog
Those have to be the three most heavily sampled songs in hip-hop.

A friend of mine was a rapper and he asked me to provide samples for his and his buddie's album in the late 80s on a major label.I put 6 songs at the top of the list and he turned them down, five of them were later used in major hits by other artists.Oh well....

6. I know all the samples

But some good ones are FUNKY WORM by the Ohio Players, School Boy Crush by AWB and Melvin Bliss' Synthetic Substitution (The Biggest) and James Brown's Funky Drummer

James, by the way, is the biggest source for beats
