Leftover Turkey Recipes...line 'em up!
This is one I got from my MIL eight years ago, my first T-day holiday with the new family. It's really excellent:

Turkey Taco Bake

1 can cream of roasted chicken soup with herbs
½ soup can warm water
10 oz. sliced turkey meat
1 pkg. of 8 oz. mild or spicy shredded Mexican cheese blend (2 cups)
3 cups slightly crushed corn tortilla chips (divided)
1-cup mild or medium salsa

Preheat oven to 350 degrees. In large bowl combine soup and water. Add turkey, one-cup cheese and 2 cups crushed tortillas. Toss, and place in 7 x 9 or 9 x 11 square pan, greased. Spread salsa evenly over mixture and top with remaining tortilla chips and cheese. Bake approx. 40-45 minutes.

The following items may be served with this dish:
Avocado slices, jalapeno slices, diced tomatoes, black olive slices, sour cream, and/or fresh cilantro.

1. Deviled Turkey Sammiches.
1 lb of turkey bits
1 small red onion, (about 4.5 ounces) diced
2 stalks celery, sliced
1 clove of garlic, minced and distressed
1 teaspoon poppyseeds (optional, but try it- they're nummy)
1/2 cup of mayonnaise (not Miracle Whip, you heathens)
2 Tablespoons strong Dijon Mustard

Mix it all up, keep it nice and chilled. I like to serve it on a nice big Hoagie Roll that's been toasted and coated in garlic butter. Add a slice of tomato and some lettuce.

2. My husband just made this sandwich...
He saw it featured on "The Secret Life of Thanksgiving" on Food Network.

Shape some leftover stuffing into a patty. Fry.
Fry a few slices of leftover turkey.

Spread a good sandwich bun with leftover cranberry sauce. Pile on the fried turkey slices and stuffing patty.

Enjoy.

when you reach the soup part... turkey is done. Let it go to it's maker. Just sayin'

BTW, you haven't lived until you eat "Turkey Croquettes". Basically minced leftover turkey meat, breaded and then pan fried. Just a step up from the turkey soup fiasco.

Burritos with turkey, beans, a little cheese. Served with cranberry salsa on the side.


On edit: and make stock from that carcass. There's a winter's worth of soups ahead of you.

10. Turkey quesadillas..
Shred turkey...mix with bbq sauce of choice. Place generous amount on one tortilla....sprinkle with cheddar...cover with second tortilla...lightly butter both sides of tortilla...cook in fry pan approx 3 min. per side or till browned. Cut into wedges and serve with sour cream. You can add onions if you wish. MrG loves these. :hi:
