2. It is ground up chickpeas in tahini sauce
served on Pita bread...in other words Arab food.

11. Try a gyro
Beef and Lamb cooked on a spit, carved and put in a pita with tomatoes, lettuce and onions with a cucumber dressing.

Falafel is good too, ground chickpeas formed into patties and deep fried.

15. Try Couscous
It's a chicken dish. Or at least it tasted like chicken... hmmm.

An important thing to know is that it's NOT pronounced "kus-kus" Apparently that pronunciation is slang for a female body part in Arabic. I was SO embarrassed when the wife of one of my Palestinian hosts explained to me why everyone got quiet after I said that. :blush: It's pronounced "Koose-Koose"

25. Couscous is a grainy pasta dish
Kind of takes on the flavor of anything you mix it with...I usually make it with chopped red onions, chopped tomatoes, and chopped cucumbers, seasoned with garlic, salt and fresh ground black pepper.

I've heard about hummus for years but I've no idea what it is.
All I know is that is a dip of some kind served with bread. Do you have a good recipe?

13. I have never made it
I usually buy it at the Middle Eastern deli near me.

Here is a recipe

2 cloves garlic—roughly chopped
¼ cup lemon juice
¼ cup water
14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt


PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.

Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.

Tip: Prepare extra quantities of hummus—it can be refrigerated, covered, for up to 1 week and frozen for up to 3 months.

16. Thank you. I'm going to try it out this week.
I'm silly and saw chickpea and thought peas? No peas allowed!

It actually sounds quite good though. Much healthier than what we've been eating.

29. Around here, most of the supermarkets carry it...
and I've used it as a Mayo substitute on sandwiches, and even as a sort of salad dressing.
