pcs of chicken, sauteed in olive oil, with garlic, mushrooms, and tomatoes (oh and did i say lots of garlic)

16. My SO makes a great dish I call "Ralphie Chicken"

Sautee up some boneless breast or strips, along with a little bit of onions and garlic, and some bigass portabello slicess. Top chicken with pepper cheese, then add the portabellos. Serve over noodles or brown rice or couscous. MMMMMmmmmm......

let simmer over a medium fire until the mushrooms are softened, but not quite soggy and you have a wonderful dish.
