Anyone got a good potato salad recipe?

Anyone got a good potato salad recipe?
I've never made potato salad before and I thought I'd try making one for a BBQ tomorrow.

I know there are countless potato salads and some I've had are tastier than others, but I can't recall what is put into potato salad, besides the obvious and I don't really know how to make that nice yellowy dressing. Is it mayo and egg yolk?

How do i make the dressing and what little veggie bits are good to put in it?

1. Here's how I make it. I like it simple.

Potatoes (probably 7lbs or so) washed, peeled, and cubed
6 eggs

Boil your potatoes and eggs. You want your eggs to be hard boiled, and your potatoes to be fork tender. Usually around 10 minutes, boiling, in the eggs, and 20 or so on the potatoes.

While the potatoes and eggs are boiling, start dicing:

1/2 large onion (I like Vidalia onions. Yum)

After your potatoes and eggs are done, drain the potatoes and peel the eggs. Place your potatoes in a large bowl.

Dice your eggs. Add the eggs and onions to the potatoes.

Now this is where your own personal taste comes in. I don't like mustardy potatoe salad, so I use only mayo, but I like the following spices.

I use at least a cup of mayo with this recipe. Add mayo to your own taste.

Then I add the following spices, seasoning:

Pepper
Sea salt
Tonys
Celery seed
Edit to add: a couple of heaping tablespoons of Sweet Relish

Mix well, but do so softly, unless you want mashed potato salad. Adjust the amount of mayo you like in your salad, and if you want a yellow salad, add a squirt of mustard.

Refrigerate, and you're ready to eat!

That sounds about right. I wouldn't have thought to put some mustard into it but I think I like the ones I've had with a little mustard.

I was thinking of adding some finely diced red pepper and green onions into it, too.

7. Some people like...
to add everything from apples to celery to theirs.

I like mine soft and comforting...a major good comfort food.

Be creative. Add whatever veggies you like. It's hard to screw up potato salad. :D

Cut up potatoes, boil in water with about a cup of vinegar added. It give the potatoes a nice zing.

When just fork tender, drain and refrigerate potatoes until cold. This will help them stay together and not turn to mush when you mix.

You can add mayo (Hellmans is THE BEST), mustard if you like the yellow variety, cut boiled egg, celery seed, sweet pickle relish.

Some like to add dill.

On edit: Of course salt and pepper

3. Use mayo and miracle whip.....
if you wish, put a bit of dijon mustard in it.

Of course use some spices, I like seasoning salt, garlic powder(a dash), some onion powder, and of course, dill.

I put chopped green onion in, and maybe some sliced radishes.

Be sure not to overcook the potatoes, you want nice chunks everybody can bite into. ;) :D

5. One of my friends substitutes olive oil for most of the mayo.
It tastes great and it's better for people minding their cholesterol.

9. use red potatoes. Cut them up and steam them
the potato flavor just explodes in your mouth.

It takes less time and is a lot less work.

then cut up and add your other ingredients. I slice it all up in my food processor while the potatoes are steaming and the eggs are boiling.

Combine everything after the potatoes and eggs are cooled.

I use:

bell peppers
green onions
hard boiled eggs
chopped celery
greenolives or dill pickels depending on my mood
salt pepper etc.
mayonaisse

BUT you can also use Ranch Dressing mixed with mayo and that is very tasty too

10. Do not use russet potatos. Do not use baking potatos.
You'll end up with a mushy mess. Yukon golds, reds, any like that. I put celery, green pepper, red pepper, and broccoli flowerettes in mine. Tomato and cucumber on the side, because they get soggy.
