America used to be more creative with its pies.
Found this while researching what the heck chess pie was...

"In tracing the roots of chess pie, Egerton has uncovered three similar American pies -- jelly pie, Jefferson Davis Pie, and transparent pie -- and a distant cousin, cheese pie, made in Britain."

Now it seems all we got is apple, cherry, and a few other types of pies. Just the names of some of the ol' time pies are intriguing.

2. You need to get in the country more
Gooseberry, rhubarb, funeral, shoofly, icebox, sweet potato, and finger are some of the pies that are still around. Granted, you're not going to find a lot of these in your local bakery, and it is probably harder to find them in urban areas. But get yourself out to some small town bake sales, especially in the South and Midwest and you will find all of these and more. In the course of my life I've had all of the above mentioned pies and more, and they're all yummy.

Pies are becoming a lost art though, and you're right about our selections becoming quite small. But you can still find some odd pies in some out of the way corners of the country. And if you do some research you can find the recipies and make them yourself.

3. See - I've never been to the South
Grew up in rural Rocky Mountain areas - and they didn't have any of these out there pies.

4. Ahh man, you are a deprived child!
Come on out here to the Midwest, and poke around the little country diners. I live in Missouri, and when I travel throughout the state I simply love to stop at the little Mom and Pop diners in the little towns and try their pie.

Here is a good place to start, I'm sure if you poke around on the net some more you'll be able to find some more recipies. But beware, some of these pies, like Pecan, will rot your teeth out immediately, they're that sweet!<http://pie.allrecipes.com/directory/2528.asp>
