But they have to be done right. Not so short that all the cheese inside is cool and not melted, and not so long that all the cheese has melted out already. Just to the point where the cheese is really gooey and flowing, and melts just that little bit more as you dip it and eat it up. :)

6. Ceveche del Caribe

one whole talapia
5 limes
1 head garlic
1/2 onion
10 serrano peppers
1/2 bunch cilantro
salt

cut tilapia into 1/2 by 1 inch chunks. Chop onion, garlic, peppers and cilantro. Juice the limes. Place all in a "tupperwear" type container for a couple of days.
