3. Opposum is the one meat that doesn't taste like chicken. >
If you're making moonshine, by chance, just toss it in the still.

4. There is no wrong way to cook Opossum.
Just throw it raw into a pot of boiling water, add some carrots and voila! Opossum stew!

Now that's good eatin'!

7. Possum and Chestnuts

Skin opposum, remove glands and entrails. Scrape clean and scald in boiling water. Rub inside and out with salt and pepper and set in cool place. Stuff with chestnuts, apple sauce, and bread crumbs in equal proportions. Cover with slices of sweet potato, one cup boiling water, one-half cup lemon juice. Bake in butter and baste often until tender.

12. Not really.
And I know what you mean. A couple of years ago where we used to live, my wife came up to the bedroom before she went to work, and said they'd killed one in the front yard, and could I please get rid of it before the little girls nest door left for school? I said ok. I went outside about an hour later, and there was no opposum to be found anywhere.

13. My dog never killed them
she would throw them in the air for a while, then lay on the porch and watch them. After a while, she would get bored and come in the house and the possum would get up and walk away. Damn they are some tough critters!
