1. Depends.
They're fine until they're rotten.

I have carrots in there I picked last summer, and they're okay.

2. It depends on the vegetable.
And also on where in the fridge you're keeping it, whether it's in plastic, etc.

3. You'll know when they're bad-- they're nasty...
but if you know you're not going to use them for a while, most can be frozen easily.

With most veggies, cut and peel as necessary, then blanch for a short time in boiling water. Then freeze.

4. Cook 'em up! Make a good soup that you can freeze
Veggies shelf life is usually about one day shorter than the day you plan on using them.

5. Molds & Fungus
if they are old but still look Okay , be sure to wash them really well, molds and fungus are always growing on foods and can make you very, very sick - allergies especially
