I just made the most amazing soup stock
Tonight, when I roasted the chicken, it was a chicken that had been marinating in white wine and rosemary for the better part of the day.

I stuffed the carcass w/ onions, celery, peppers, and garlic.

When I simmered the carcass for stock, I added onions, celery, bay leaf and just a smidge of brandy (and salt and pepper)


The stock smells amazing.

3. chicken & veggie w/ pasta
little tubitini pasta

carrots, celery, onions, tomato, and green beans

and chicken.

4. Your stock sounds amazing. I made soup today too-must be the weather!
I used store bought stuff though. Whole Foods Organic Chix Stock isn't bad, but you have to doctor it. I mixed some homemade pesto in for some flavor.

I bet that chicken was yummy! It's a perfect day for that kind of meal. Did you get much snow?

5. My son said that there was about 6 inches
He did the shovelling. I haven't been out all day. Just that kind of day.

The chicken was pretty good. The kids gobbled it up.

7. That is my basic recipe for chicken stock. Makes my mouth water.
However, my high B/P and cholesterol problem has me buying 100% fat-free reduced-sodium organic chicken stock. I always have at least 6 of the 32-oz "boxes" on hand. I also use the organic mushroom and vegetable stock. It is a fine substitute and labor saver.





Good products. I recommend them.
