1. Yummy - sounds good
I've had eggplant relish on chips and crackers and the like and it is delicious, but I imagine better on something curried.

3. tmy salad for today
mixed greens, broccoli, onion, cherry tomato, beets, 1/2 hard-boiled egg, grilled chicken, pepperjack cheese, marinated mushrooms, cottage cheese, and curried coucous w/ eggplant relish.

Some of the other things offered today: chickpea salad, ceasar greens, carrots, cucumbers, pasta salad, polenta squares, cantelope, honeydew, watermelon, strawberries, seedless grapes, plain yogurt, tofu....

as well as the daily toppings: raisins, croutons, sunflowerseeds, grated cheese, and an assortment of salad dressings.

We really do have a marvelous salad bar here. Actually, the whole cafeteria is pretty decent.

4. Great Salad Bar. Now Here's My Standard Salad-Bar Rant:
Sunflower seeds and raisins mixed together. I fail to understand the widespread practice of providing a container of sunflower seeds to which raisins have already been added. Don't get me wrong...I'm not anti-raisin, but I don't want them on my salad - or any other fruit for that matter. I love sunflower seeds on my salad, however, and I'll sift through them by the spoonful in order to get some *without* raisins. If it looks like there are so many raisins in there that I'll hold up the line, I will get a small bowl, put a few spoons of sunflower seed/raisin mixture in it, and sort through it at my table.

I just want to know who's responsible for the travesty of mixing these two ingredients together in the first place? What arbiter of taste decided that sunflower seeds and raisins belong together in the same container on salad bars? You don't find garbanzos & radishes in the same container...or radishes & cucumbers...why sunflower seeds & raisins? What next...dump all the ingredients into one large bowl so everyone gets some of everything?

I don't consider myself finicky about food, but it irks me, having to get something I DON'T want in order to get something I DO want! I feel better for having gotten that off my chest.
