1. don't worry 'bout the ketchup

it has vinegar and citric acid in it; highly unlikely to grow a significant amount of of anything harmful in the day or two that it's out on a counter before it gets used up.

Still, packets are better.

Plus legionnaires requires a specific temp and growth medium - and it's a bacterial disease associated with standing water specifically at 90 - 105 F in water systems.
