Ahh... tis a beautiful day and the barbecue is lit for Greek tonight!
Marinated chicken breast that has been soaking since last night in olive oil, lemon juice, garlic and fresh chopped oregano...
Grill and serve with fresh chopped tomates, cucumber on warm pita bread with a hefty tablespoon or two of Fresh Tsatziki (see below) and Greek Feta cheese salad on the side. Retsina wine if you can find it.
Tzatziki
2 litres of Greek or Bulgarian Yogurt (thick and plain)
1/2 cup of sour cream or quark.
1 table spoon of cream cheese
2 english cucumbers peeled and chopped in small chunks. Drain first.
1 lemon (squeezed)
2 cloves of garlic (crushed)
1/4 cup of fresh Oregano chopped (3 table spoons dry) dry if that's all you have.
salt and pepper to taste
(teaspoon of chopped mint optional for Turkish version)
Chop and mix, blend then add cucumber. Lovely dip.
Take pita bread, brush with olive oil and warm in oven or in pan then slice and dip...
Yumm....
Cheerio
