I have - Be prepared for huge amounts of grease
Genuine goose grease. You'll get far more than you need for gravy.

3. follow directions carefully
we ignored the directions to stuff it with all kinds of fruit and other stuff, thought it sounded awful. It is there to soak up some of the grease, and if you don't get rid of it, the goose will taste TERRIBLE. Actually, it doesn't taste all that great if you do it right, but it is okay.

7. In 2000 My German friend and her mother
stayed with us over the xmas hollidays and for x-mas eve the mother made two geese (we are a large group) she put them right on the oven rack with a big pan below to catch the grease, She saved the grease to use as a spread on toast -it kind of tasted like bacon grease to me and as much as that is good for frying or seasoning I don't think I could eat it on toast.

She also made something called herring salad for new years - salt fish in sour cream - I couldn't quite even bring myself to try it.

Now, the cakes and cookies were to DIE for!! cakes made with grund up nuts instead of white flour, lots of butter oh man I may have to try some this year!
