What are you (did you have) having for lunch today?
I made a mixture of corn, black beans, red beans, broccoli, onions, red peppers, jalapenos, garlic, cilantro, baked tofu & lime.
It is really yummmmmmy

12. I made a very good garlic bread soup a while back
an Emeril Lagasse recipe:

prep time 10 min.
cook time 1 hour 10 min
6 to 8 servings

2 tbsp. olive oil
2 c. chopped onions
1/4 c. finely chopped garlic
1 bay leaf
pinch of crushed red pepper
salt
2 qt. chicken stock (I used beef stock and it tasted just yummy)
2 c. diced day old French bread
1/2 c. heavy cream (I used whipping cream; seemed to work well)
1/2 c. finely grated Parmigiano-Reggiano cheese (use a fresh wedge and a grater; it's simply divine)
1 tbsp. finely chopped parsley leaves

In a large saucepan, over medium heat, add the olive oil. When the oil is hot, add the onions, garlic, crushed bay leaf, and crushed red pepper. Season to taste with salt. Saute until slightly carmelized, about 6 to 8 minutes.

Stir in the stock. Bring the liquid up to a boil and then simmer for about forty minutes. Turn the heat up, and whisk in the bread and cream. Continue whisking until the bread has dissolved into the soup, about 10 minutes.

With a hand-held blender, puree the soup until smooth (yes, while hot). Whisk in the grated cheese, and season with salt and pepper. Ladle into bowls and serve.

SUGGESTION: Use beef stock instead, and while simmering the soup, prepare sandwiches as follows:

Buy a good flank steak or other tender beef cut, and cut into small, fine strips. Tenderize/season to your taste, and saute perhaps in olive oil and spices of your choice. Using Kaiser rolls, scoop out the inside of the crown and discard or even add to the soup; puree the soup as instructed.

Slather the inside of the crown with mayo if desired, add the beef, and serve as a unique French Dip Sandwich meal! :)

(I made this meal a couple weeks ago, and it was *really* yummy.)

19. It IS a yummy one
I like all of Emeril's recipes. Some of them are quite beyond my abiliy, but he's the kind of chef that doles out recipes that you can play with (which he encourages on his show).

I've always been of the mind that it really doesn't matter that you might not have a recipe in front of you... just be creative. Cook a bit for yourself, sizing meals down to a single serving, and see what works. Granted, some things in many recipes are requirements, but I like to play with my food :)

22. I agree.
I always play with recipes. Just like my lentil soup, very easy, few ingredients, but you can make it total vegetarian, add chicken broth instead of vegetable broth. You can add some curry powder, garam masala & a little cinnamon to really spice things up. All you need is some fresh, crusty bread.
