Similar suggestion to that above, not too salty with a nice flavor. Also, try a combo of white wine vinegar and mustard of your choice (like a Dijon) instead of mayonaise. And bacon. makes more of a German style salad.

And use Yukon Gold potatoes!

6. Mild pepper rings and finely diced purple onions --- and ---
substitute plain yogurt or sour cream for some of the mayo.

Add a hint of ranch dressing if you are feeling especially frisky.

But, most of the trick is in cooking the taters just right.

Not mushy - Not undercooked.

7. Pickles in potato salad - one of my pet peeves!
I make it with red potatoes, skin on --- sweet onions (lots), Italian salad dressing (a marinate for the potoates), yellow mustard, Hellman's (or Best Foods) light mayonnaise, celery, hard boiled eggs, and yellow mustard. I used to put in just a hint of dill pickle juice but I haven't done that in ages.

I can't stand pickles in potato salad (or tuna salad, or chicken salad, or egg salad.) They do not belong!

pickles only belong by themselves, don't even think of putting them on my burger. But I will gladly sit and eat half a jar of pickles with my fingers!

23. Paprika is the friggin KEY to a great potato salad...
But what you do, unlike supermarket delis where they just dump it on top, you need to first get your mayo/sauce combination, then mix paprika in it and stir well, then when it's all put together, you put a little more in, then stir it up again. It's the paprika that makes it addictive.

Also, some diced hard-boiled eggs.:9

hard-cooked eggs. Using only the yellows, mash the cooked yolks through a sieve and add to your sauce. Very rich. Very tasty.
