That's "Tzatziki" not "Taziki"... OKAY?
Make sure to get it right!!!


In a mixing bowl, blend

* 1 cup strained, whole fat, plain yogurt; if you cannot find strained yogurt, you can strain regular yogurt on your own (start with 3 cups of unstrained yogurt).

* 1 medium cucumber very finely grated and dehydrated by putting in strainer and pressing with paper towel; you may use instead the yogurt straining technique to dehydrate the cucumber,

* 2 garlic cloves very finely grated,
* dash (1/4 tsp) of onion powder,
* 1 tbsp Greek olive oil, and
* 5 drops of lemon juice.
Blend until the sauce is as smooth as can be.

Best served right after it's mixed, prepared from cold ingredients. It's meant to be a dip for keftethes or sauce for stuffed pitas. It holds in the fridge for a week or so.

1. Do you have to strain the yogurt?
I love TZatziki...but never did that with the yogurt.

There was a Greek place in Columbia MO where I grew up that mixed feta into the sauce. It was intensely good!
