How should I cook my chicken breast?

How should I cook my chicken breast?

The only fresh ingredients I have are a boneless chicken breast and some broccoli. I have a variety of canned goods, spices, etc... how should I could my chicken?

Foreman grill :). Mine were pre-marinated in a lemon-pepper marinade though. They were GOOD.

If you're getting ready to cook them now, I recommend rubbing them with some olive oil, then season with black pepper and some Italian seasoning then grill :). Cook the broccoli separately (preferably in a steamer), then dose it with butter, then salt and pepper to taste :).

3. Hmmm. .. many possibilities
Chicken and Broccoli Stir Fry?

Cut chicken and broccoli into bite size pieces.
Mince some garlic and/or slice some green onions.
Open a can of water chestnuts and drain, and/or 1/2 Cup of sliced, slivered almonds.
Have some sherry? Have it handy. Or lemon juice.
Open a can of chicken broth or make with 3/4 C water and 1 bouilloun cube.
Cook up some rice.


Mix soy sauce (or oyster sauce) - about a quarter cup - with corn starch - about 2TBS. Add chicken pieces and coat. Set aside.

In skillet or wok, heat oil (preferably peanut oil.) Stir fry broccoli and when just starting to get tender, add garlic or green onion. Stir fry till broccoli is tender-crisp. Add coated chicken pieces and stir fry. As it sticks (and it will) add chicken broth, a bit at a time. When chicken is done (cut and check one of the pieces) add about 1 T. sherry (or lemon juice) and almonds and/or water chestnuts. When they are heated through (about 2 min), taste. Add some more soy or oyster sauce, to taste. Serve over rice.

4. I used teryaki sauce on mine today
I cut up the breasts and soaked them in teryaki sauce for a while. Then I cooked them in peanut oil and garlic flavoed oil. Then I shook a healthy amount of Mrs. Dash garlic and herb on them as they cooked.

Are you long on time and energy?

'Cause if you are then you can pound out the breasts 'till fairly thin and wrap each around a little dab of seasoned breadcrumbs (secure w/ a toothpic or two) before dredging and frying...

PS Make sure to get the internal temp up high enough or you could end up with the evil stuffing bugs. These are small enough thats its not that hard to do, unlike a whole bird.

Maybe a little bit of oregano or marjoram IF you don't have basil--but you gotta have the garlic!! Be sure to use olive oil to sautee with (just a splash--ok? don't DRENCH IT!)

After you have it browned, steam or sautee broccoli till just shy of tender crisp (it continues to cook after you take it off the heat) and then toss it with margarine and parmesan cheese and a tiny bit of either white wine or lemon juice and garlic...

9. cut chicken and broccoli into pieces
and stir fry . I love it that way. I also use this stuff called Oyster sauce after its almost done. Only takes a few minutes . Cook the chicken first for about a minute or two then throw the brocolli in.
