So who's grilling this weekend?
I am! Just went to the store for supplies, and got brats, sirloin steak, chicken, and a 10 lb slab of ribs! Grillin crew, gimme a hell yeah!

3. I got a bullet smoker in Jan, and have been smokin' and Q'n tons. and

the last few weeks I've been on a grilling kick (cuz the weather's been great---cicadas be damned!).

After months of smoking huge briskets, pork butts, ribs, and even makin' my own bacon (it's fantastic, btw), I've gone back to grilling for a bit. Which is cool, cuz it can take 12 or 16 hours to smoke something, while grilling is so fast!

Lately I've grilled:

lobster tails and scallops

Angus delmonico steaks,corn in the husk, quarted onions on skewers, and plantain slces (to try out a cast iron grate I got, with a 'searing' side)

rotisserie French style ribs (with olive oil and herbs de provence---ooo la la)

beer can chicken

beer can duck (gotta use a tall boy can)

jerk chicken wings

rotisserie chicken (i like beer can better, as they skin is crispier)

hot dogs with Eaton's hot mustard (check it out at wwww.23degreesnorth.com----you'll find great jerk marinades there, too)

and most recently, a whole pork loin, marinated in jerk marinade, then butterflied, spread with black olive and caper tapenade, rolled back up, and tied back together with a few strips of my homemade bacon on the outside. YUM! And what a beautiful thing to serve----pinwheels with white, white pork and black black filling. Fabulously tender, too!

Man, now I'm hungry!

On edit: if you get interested in smoking, check out this EXTREMELY helpful site (actually, maybe that's too dangerous---I accidentally stumbled on the site and got so excited I ran out and got a smoker). www.virtualweberbullet.com. Great recipes, tips, comraderie. A fantastic group!

Oh, from my grilling list, I left out

east/west chicken wings on skewers

grilled eggplant with mozarella

pizza on the grill (yes indeed!)

asparagus rafts

portebello mushrooms stuffed with garlic, pine nuts, and rosemary

Hey, this is ONE good thing that comes from being unemployed for nearly a year. Plenty of time to grill!

I have a Weber Kettle that I do all my Q'n and grilling on. It's great as a "fast" smoker, and will do a bang-up job on ribs and the like. However, I really should see about one of those Weber smokers. I had a Cajun smoker in college and hated it, but Weber is a brand that I know does a great job. Thanks for the link!

7. the thing runs like a champ
You can even fire it up and run it all night unattended for those long, long smokes. It's really a winner. Check out the site if you dare and you will prolly be sold on it, as I was.

8. hey, where do you buy alder wood?
I haven't tried salmon yet, but I sure want to. Have you done salmon on a plank? (cedar or something, I think)

14. Weber is the ONLY way to go!
I've tried a number of other grills, and I've never been happier than with my Weber. First thing I'll save if the house catches on fire (although really, it should be OK in a fire...)

9. I use pecan wood.
Lots of pecan groves down here and the deadfall is free for the picking up. A little more delicate flavor than hickory.

I do a lot of shrimp on the grill, also a local product.
Shell them, but leave the tails on for "handles".
Marinate for an hour or so in bottled Italian dressing (the easy way), or make your own oil-vinegar-spice mixture.

DO use a long handled basket to cook them in.
I didn't think of that the first time and it was all assholes and elbows doing turn-the-shrimp, turn-the-shrimp, turn-the-shrimp, ad infinitum.

with no seasoning during grilling and just a touch of A-1 for dipping

when tummy settles out, having strawberry shortcake for dessert

13. Marinating the ribs and chicken now
Got em in my own recipe marinade, which is Worchestershire sauce with a whole lotta things thrown in. It took 2 seperate full-size roasting pans to hold the ribs! I swear the package was like the ribs at the end of the Flintstones that tips the car over...

18. I made beef short ribs for the first time
not on the grill but, man oh man braised them and stewed them in wine and tomato paste and spices and da-yum

wont be the last time fer' sure
