Name the Unidentified Sausage #2
Hint: When I lived on the Gulf Coast, this spicy sausage was sometimes extracted from it's casing, formed into a fist-sized ball and deep fried. Then you'd dig in with a saltine cracker. Ahh-yeee!!!

I didn't know that you were Cajun. That's so cool.

Which Parish? Ever been to St. Martinsville? I love Southern Louisiana. Spent one of the best vacations I ever had hanging around Houma.

The place ain't half bad, but refuses to take my advice and use french bread instead of hogie rolls.

Wishin I had me some boudin right now, but I'll be back in N'wawlins by the end of June and I'm gonna do nothin' but eat.

16. No clue, and here's why
My great grandparents came to Texas from Louisiana at the turn of the century - one set from Kaplan, and one set from Rayne. They settled on the Neches River near Beaumont, in a small port town. The whole area is crawling with Cajuns. It's so close to the border it should be considered Louisiana.

14. Red or White...what is your favorite?
I like the white myself. My in-laws would make fresh boudin when they had their boucherie, and after watching them make the red, I could never eat it.
