So, pretty simple and basic one this week, we made pizza dough! Next week's video is going to be several different options on what to put on that dough to make some delicious pizzas, but this one is just a back-to-basics pizza dough. This comes out bready, so it's not really the right kind of dough if you want to make a thin-crust pizza. It is delicious and tender, though. Bakes nicely in the pan-style of pizza we made, and held up very well to all of the toppings.
We used instant yeast, which you do not need to wake up in warm water before adding to the mix. If you have active dry yeast, you would still need to do this step, and the instructions are in the description.

During the House of Commons first virtual sitting Tuesday, Trudeau was pressed by the Bloc Québécois to prevent companies that dont pay their fair share of tax from benefitting from government aid.
Last week, under repeated questioning from both the BQ and NDP, Trudeau had refused to make the same commitment, saying that his government would not withhold wage subsidies from a worker just because of the behaviour of their employer.

Haha, in other circumstances, I'm sure Dougie would be right there with them. Nice to see he's at least taking it all seriously. I mean it could just be that he doesn't like protests in general, but I suspect a lot of these folks are conservative "open the economy!" types, which should be right up his alley.
Ford commented on the situation after being asked about it during his daily COVID-19 briefing.
We have a bunch of yahoos out in front of Queens Park sitting there protesting that the place isnt open, he said. Theyre breaking the law and putting everyone in jeopardy, and God forbid one of them end up in the hospital down the street.
Ford then mused about what would happen if every Ontarian acted followed the actions of the protesters.
It would set us back months, he said. Thats what theyre doing through these reckless protests, theyre setting us back. I dont know who these people are, but obviously they dont care about everyone else in Ontario. It just burns me up.

Mini cheesecake two ways recipe
Everyone's depressed and stress eating, so it's the perfect time for cheesecake! This is a pretty simple and basic recipe, though it does require a little bit of specialized equipment (in the form of springform pans). We got these amazing little tiny springform pans, so instead of making one giant cheesecake, we could make two teeny ones, and we had enough filling left over to make another couple the following weekend (the filling stays good in the fridge for a week, easily.

You can actually see the curve start to flatten in Toronto ~15 days in, which would be around March 26. Bars/restaurants/closed March 17, emergency declared March 23, playgrounds closed March 25. Physical distancing appears to be working. Need to keep it up.

Totally Non-Traditional Saag Paneer (with feta!) Recipe
Saag paneer is an Indian curry dish made from a firm and mild fresh Indian cheese called paneer in a rich and aromatic spinach-based gravy. It is truly delicious (though some people have a hard time getting past the look of the green sauce!). Paneer is not always easy to get your hands on (though it's reasonably easy to make at home), but we like to make the dish with feta cheese instead! My hubby actually came up with this idea and then a week later saw one of the excellent talents on the Bon Appetit YouTube channel doing almost the exact same thing. Timing!
It's a delicious and rich dish, very flavourful and slightly spicy with lots of amazing aromas. The sour and tangy feta cheese adds a lovely zip to everything and complements the spinach very well.

Another simple one this week! this one goes back to the mashed potatoes we did last week, and we made them into croquettes! They're basically mashed potato dumplings with some flavouring and then shallow fried. We went a bit of a "baked potato" vibe with these, giving them green onion/chive flavouring. The insides came out very fluffy and the outsides nice and crispy, and they were very tender. The trick is to make sure your oil isn't too hot that the outside gets too dark before the insides are all-the-way cooked, or you get the flavour of raw flour.
You can spice these up however you like. We ended up making a little dipping sauce for them out of mayo and our homemade ghost pepper hot sauce which was super delcious and went very well. They will also go with a spicy ketchup or even a katsu-sauce sort of thing.
