Scallions ...... first time

When are they ready?

Can you just cut off green leaves to use?

Can you dry them so have oniosn to use when the reciepe asks for
dried onions?

You can let it go to seed so you have more plants
as far as preserving the leaves, I tend to cut then and wrap it in a damp paper towel and put that in a green plastic bag (they have them at my local shoprite, but a regular paper bag will work for a short while. Then try to use as soon as possible, te bulbs can be cleaned and kept for much longer.
