Bill actually has a couple of nights off in a row, so I'll actually be having a normal dinner for a change! I don't usually feel like cooking for myself, so I have been just nibbling since Bill has been working nights for the past month or so...
Tonight.... the plan is his Steak and Guinness pie, with a potato and cheese crust. Yummy.
What's for dinner where you are?
Shrimp, squid, tuna, mussels, rice, bell peppers, mushrooms, peas, garlic, onion light coat of olive oil in the pan (wok), saffron ...

(12,254 posts)Big pot of comfort food that I can dip into for several days this week and that Mr. Pup can feed himself out of when I am out at my Tuesday evening meeting.
Just finished a spinach-mushroom-onion omelette with whole grain toast and link pork sausage for breakfast. Not quite ramped up to start cooking again already.
Your Steak & Guinness pie sounds yummy!

(31,997 posts)using up things we have around the kitchen plus I don't feel like cooking much. The Hubs (Allergic to Wheat) is dieting so I just threw it in a skillet. Will take some to work probably Tuesday as well.

(163,986 posts)and the first thing I did was burn the chiles that were supposed to be toasting, and got hot chile oil all over my hands and mouth. lol
But, I had enough of those four chiles to do it again right, and soap and water to wash off the burn.
Seared the meat, covered it with water, threw in a few bay leaves and a quartered onion, and then the chile paste with all the spices. Now, it just has to simmer for a few hours.
While I'm waiting, I may roast some cauliflower and toss it will oil, pickled cherry peppers and parsley. Then the radishes, onion and cilantro have to be chopped and ready for topping when the birria is done. It's warm here today so maybe just some sherbet for dessert.
It's nice to cook on laid back Sundays.
