Made boeuf en daube the other evening. MMMMMMMM...........

Chunks of chuck, carrots, onions, mushrooms, garlic, red wine, beef stock, tomato paste, herbes de provence..........2 hours in the cast iron dutch oven at 350F.

soy sauce, ginger, sherry, 5 spice powder. Cook until it's falling apart and add potatoes and carrots for the last half hour.

I keep going back to bourguignon every month or so. A bottle of wine lasts for that and two batches of sauce for pasta.
