What's for Dinner, Wed., July 8, 2020

Appetizer: cold cucumber mango soup. Other ingredients are red onion, lime juice, and sour cream. A little hot pepper sauce. The garnish is cilantro, red onion, and mango bits.

Cold cannellini salad. Has chopped celery, red onion, herbs.

Orzo with light tomato sauce.

Sloppy Joe on Brioche roll.

Dessert: 1/2 a chocolate chip ice cream sandwich.

Today has been a "pretend you're a slug" day.

Other than taking the trash to the dump, I really haven't done much today and neither of us has given a thought to dinner. How weird!

If we come up with something worthwhile, I'll repost.

I think I'll make that this weekend. The blackened shrimp pasta on that site looked good too.

It was depressing seeing the chicken and shrimp prices in the recipe pics, taken only 4 years ago.

Some kidney bean soup - chicken stock, lots of veggies and a few cubes of ham from the freezer.
Kale we blanched and froze in April. I hadn't put any up like that and it turned out well.

I saw one Klondike low sugar ice cream bar in the freezer earlier. I'm hoping it is still there. If it is gone, there is fruit to eat.

3-meat pizza to which I added peppers, onions, garlic and extra cheese.

Garden salad

I forgot to mention him in my earlier post.

He had a mini burger (no bun please), a taste of cheese toast, and Purina Temptations (cat treats) for desert. Those treats are his favorite even over the fake bacon strips. He had no interest in the beans or kale I had.

The little store with the butcher finally got some reasonably priced (2.99 for the 80/20) beef. I had them grind FLFC 6 pounds which TJ divided up and froze. He is so picky that he will lose weight if he can't be enticed into eating. At five pounds, a measurable weight loss is concerning. I've never had such difficulties with other pets.

I marinated cubed chicken thighs with ginger, garlic, soy, and sake. Then dredged them in potato starch and fried for yummy Japanese chicken nuggets. I also heated some frozen stir fry vegetables I had to use up and added teriyaki sauce. The veggies were pretty dreary—don’t ever buy frozen stir fry vegetables. Also made plain rice.
