The RG used my fresh garlic that I harvested today when he made the shrimp and grits.

I love shrimp and grits. Yum...I make the House of Blues version. I like the spice. And I make gritcakes sometimes.

Even tho it’s late I had to write about these. I baked the taters in the oven (vs micro like usual). Just used canned beans and rinsed then added water to barely cover, some garlic powder and ground cumin. To serve I spooned the bean mixture that had simmered onto the potato and covered with sliced green onion, cilantro, sour cream and fresh lime juice. It was sooooo good!

Also had cod, and some rice with cilantro and lime juice. But the “stuffed” potatoes were the star of my plate. Mmmmmmm!

Tomorrow will use the other sweet potato and the rest of the beans and rice to make vegetarian tacos.

Malibu rum and pineapple juice goes very well with this too!
