Shrimp souffles (miniature).
Ingredients are mascarpone, sour cream, zucchini, and eggs, of course. On the top is a whole shrimp in mayo-lemon sauce.
Two small pieces of tuna and smoked salmon each with a bit of mayo on top.
Bruschetta. Toppingis fried romaine, prosciutto (2 kinds), extra crispy. Also tomatoes. Caramelized onion.
The bruschetta toasts were brushed with olive oil and anchovy-garlic sauce.
Dessert: we're splitting an chocolate chip ice cream sandwich.

(23,302 posts)With tatsoi, turnip greens, spinach, zucchini, scallions and snow peas...for one! My guys are at a baseball tournament a couple hours away. Glorious solitude! Just me, the dogs, chickens and a parrot and a nice Sauvignon blanc.

(5,641 posts)Made a marinade of garlic, rosemary, parsley and evoo. Seared them in the cast iron pan and finished to midrare in the oven.
Superb! Oven had just finished cooking my potatoes with garlic, parsley, rosemary and evoo.
White wine with dinner and. Malibu Rum w/ pineapple juice for dessert.

Yeah, it was late, but it was divine!
Yeah, the fish was a little pricey ($10.99 a pound) but well worth it.
PLUS, I have the heads, tails, and bones for fish stock.
