What's for Dinner, Wed., July 1, 2020

Sliced pork chop with caramelized cippolines. The idea is to mash a cippoline and have it with each bite.

Sliced cucumber with red onion, sour cream, and goat cheese. Served in an endive leaf. Sprinkled with fresh dill.

Angel hair pasta in lemon parmesan sauce.

Dessert: cold chamomile tea and shortbread cookies.

2. I used this recipe and it needed a LOT of adjustments.

I used apple juice instead of wine.
The late in recipe addition of the curry left a very raw taste. I added 1teaspoon brown sugar and more apple juice. That helped, but the tweaking makes it an iffy recipe again.

The rice is fine and the icy cold tea is good.

We had flank steak (found it dirt cheap and had never cooked it before) marinated for most of the day in lemon lime, soda, fresh lemon, olive oil, sugar, garlic salt,pepper, fresh garlic and onion. It came out really delicious. Cooked it rare and served Baked potatoes and strawberry salad. For dessert soft snickerdoodle cookies (gluten free).

While watching the Dave Mathews livestream on youtube...I made a cold noodle salad from Miki noodles, diced raw carrot, diced English cuke and bias sliced green onion.

The dressing is cider vinegar, evoo and some coco amino acid, and honey.

Leftover cold meatloaf sliced thin and then seared in a hot cast iron skillet to develop a crust. So good this way!

Will be cold noodle salad for lunch on the lake tomorrow.
