We don't do a lot of frying at home, because we don't have a deep fryer. Deep frying in a home kitchen is a huge pain and a huge mess, but ever once in a while you just gotta make something deep fried! So, we decided we were going to do fried chicken! This recipe is pretty bare bones, but comes out tasty, juicy, and crispy. You can add whatever seasoning you like under the flour, but the trick of sprinkling it over the top of the flour instead of mixing it in is super helpful and ensures you get more of the seasoning on the chicken.
In other news, I just got laid off from my job, so who knows, maybe that means I'll be doing more interesting cooking experiments? We'll see, hopefully I'm not out of work for very long.

(21,998 posts)The Landlady(!) has this frying pan that belonged to her grandfather who was, reportedly, a great chef. It's really heavy and weighs about 8 lbs. plus there's a glass cover for it.
She uses vegetable oil or Canola oil because of their tolerance for higher temperatures. When frying the chicken pieces over a high heat, she uses the cover to limit the oil from splattering. Because of the heat radiation of the iron, the chicken cooks without absorbing the oil and she usually loses only a teaspoon or two of oil in the frying process. Of course, some of the oil is replaced by the chicken fat. For added flavor, she'll often add a little bacon grease.

(3,280 posts)Cast iron is excellent at holding a steady temperature for a longer time. Lids are problematic for deep frying, because we use a candy/deep fry thermometer to monitor the temperature, and it clips to the edge of the pot.
