Mini cheesecake two ways recipe

Everyone's depressed and stress eating, so it's the perfect time for cheesecake! This is a pretty simple and basic recipe, though it does require a little bit of specialized equipment (in the form of springform pans). We got these amazing little tiny springform pans, so instead of making one giant cheesecake, we could make two teeny ones, and we had enough filling left over to make another couple the following weekend (the filling stays good in the fridge for a week, easily.

My wife makes mini-cheesecakes for the holidays and gave her recipe to a friend that was going to host a business Xmas party. Turned out to be a disaster and she was upset with my wife. Under questioning she said the only difference is that she used a store brand, cheaper (just a few pennies) of cream cheese. The flavor and consistency was very, very noticeable.

You can use other cream cheese for this recipe, but you have to be prepared to make adjustments. Most really fresh cream cheeses are not particularly sour, so you may need to bump up the sour cream or lemon juice. You may also need to bump DOWN the sour cream if the cream cheese you're using has a higher moisture content (though you can also squeeze and drain it). Baking is so much more finicky and specific than cooking is.
