What's for Breakfast Tuesday 09-24.

Scrambled egg,toast and a banana. Feels so good to eat real food. I had a Doctor appointment this morning...I am better. Damned food poisoning kicked my butt. I will never eat another scallop again.

like the canned one just fine. haha...My husband stares at me in disgust and says, "how can you eat THAT?" It was a happy day when I found out it was gluten free.

And it is a killer recipe. Today it was the canned variety and I enjoyed it as I always do.

I just went there and didn't find it. I'll give you the one I do from memory.


The night before:
Bake 4 baking potatoes and chill
Cube cold corned beef into bite-sized cubes

The morning after:

Cube the baked potatoes, skin and all

Chop a small onion

Melt butter or add oil to a 8-9" cast iron skillet and saute onion until transparent
Turn up the heat a little and add the cubed potatoes, and cook until they are hot and getting crispy around the edges

Add the corned beef cubes saute them until they are hot

Add 1 Tbsp. Worchester Sauce, Dijon Mustard, and 1Tsp. Hot Sauce or Sriracha mixed together with 1/4 C. chopped scallions.

Mix well, cook a few minutes with the lid on then serve with a sprinkle of chopped parsley.

The original recipe also included 1/2 C. cheddar cheese, but being lacose intolerant, I just skip it.

Good luck if you choose to accept this mission. It's dead easy, but requires pre-planning. Perfect for leftovers.

I admit, though, that I usually just get a couple of really thick slices of corned beef from the deli.

I put chopped chives in two eggs and cooked it until done, then I flipped it over and put it on a slice of pizza that had green pepper, onion, and mushrooms on it. Wow, was that ever good!
