Basic Egg Salad Recipe

So, this week we're doing a super simple basic and delicious egg salad! Not much to say about this one, honestly, it's a basic egg salad. Throw it together and eat it right away! You can toss your own ingredients in there, too. We added some chopped green olives, and it was excellent! This is just the basic recipe, but coming up, we're going to do a really excellent Cajun-inspired fancy egg salad!

2. I haven't had a good egg salad sandwich in awhile. Egg salad doesn't seem to big in Oregon

I don't think I've ever seen it on a menu or in a supermarket out here.

I make a note to pick the ingredients to make some.

It's a bit spicier and is garnished with fried oysters (which will be another video!)

It really enhances the flavor.

6. I love egg salad sandwiches, so make it a lot. Don't want 'jammy' yolks though.

7. Yolk doneness is a personal thing.

We prefer the texture if they're still a little jammy in the middle, but not actually runny.

8. My Egg Salad Sandwich recipe, stood the test of time and many hungry kids

4 hard boiled eggs, (no gold yolks please) peeled and shopped
1 or2 tablespoons sweet pickle relish
1 small carrot grated
shake of black pepper
about 3 or 4 large spoons of Mayo (Hellman's is my fav).
mix well

I like to use whole wheat or light rye bread, but kids like it on white bread.
