I'm going to do what is called a "composed salad" on this rectangular plate that is Japanese in style.
One of the items is apricot and cashew nut salad. It has watercress, arugula, and a little spinach and that will go along with apricots that I soaked in Chardonnay. Also coriander. A small carrot and green pepper.
Also on the plate will be cold poached salmon. There will be a few other items, like some sprouts. I think I can actually get the spinach and the arugula from my garden (first time this season!).
My BFF (the one with the Harry Potter house) is coming over and we're going to enjoy the beautiful outdoors!
The RG is off on a business trip, so it will just be my friend and me, but a friend who is writing a magazine article on Victorian house patterns might stop by. He has a sweet tooth always brings some type of dessert.
