I made a 1/2 batch of traditional rum balls and a full batch of (I think) gluten-free pina colada rum balls. I have made both recipes in the past. This is only the second time I made the pina colada rum balls.

(17,076 posts)I got a fifth before Christmas to pickle a vanilla bean. Seems to be lasting awhile I really like the pina colada recipe. It has flavor and texture.
The traditional ones turned out good. My sister is coming for the weekend, so I made a 1/2 batch for her.

(17,076 posts)The ones my Gram made didn't have dates, so I opted for the vanilla wafer recipe. She made date bars for Christmas, but I didn't get her recipe. After a long search, I found it in a vintage community cookbook.

(9,846 posts)they were very good. A friend gave me a recipe from scratch for them and they are even better. Very filling, and not too sweet.
ETA: After the rum balls are cool, I roll about half of them in cocoa powder, then I roll the rest in cocoa mixed with confectioners sugar. I could eat the whole batch. Unfortunately, I probably won't be doing any Christmas baking this year if my gallbladder keeps giving me a reason to quit.

(17,076 posts)I posted on her comment a few days ago, and checked to see if I had already met you I had gallbladder surgery 2/1/18. I was only sick once, but as time passes, I get more and more energy, so maybe it was dragging me down and I didn't know. I was happy the surgery and recovery went so well.
Sorry you're having problems and I hope your gallbladder settles down for you.
