2. What kind of dishes or preparations would be best for Elephant Garlic?
BTW, I got the E. Garlic and Non-E. Garlic from my brother's garden. Nectar from the gods . . . .

Both work fine. I would use the one that is the freshest for the pesto. The rest great for cooking.

I'd use regular garlic, especially if you're following a recipe. Roasted garlic sounds good.

Smash it up with a little butter, and smear that on a crusty loaf of cut open bread. Sprinkle on some Parmesan, and toast it under the broiler.

In my experience elephant garlic is more like shallots and are much milder in flavor. So I'd use them in instances where I'd want something more subtle.

For pasta aglio-olio-pepperoncino I've substituted chipotle (powder) for the pepperoncino: yum!
