There are also some great egg plant recipes lower down on the page. I've got some fresh eggplant from my garden and now I have some great recipes for them so thanks

2. Homemade pizza tomorrow

Have some mozzarella cheese, sausage and hard salami in the fridge, so it will be pizza on Tuesday, always make one for my neighbors too.. Going to the market tomorrow to get some produce. Hope for a nice watermelon. Corn, ripe tomato's, squash are some of the veggies on my list. Peaches are about done, but blueberries are good. Maybe some granny smiths for an apple cobbler later in the week.

On Wednesday, will make easy dish, baked pork chops with corn. For 4 pork chops, use one ear of corn, cut corn off the cobb, one small onion, a little chopped red bell pepper if you have some.

Spray shallow baking dish with Pam, lay in pork chops, then add corn, onion and bell pepper. Sprinkle on some season salt and black pepper. A few shakes of Worcestershire sauce is good. too. Cover with foil, bake in 350 degree oven until done, will depend on how thick the chops are. About one hour. Uncover and let bake about 5 minutes more to brown . This one of my husbands favorites.
