I'm not really interested. I will never have the equipment or staff to produce any of that stuff and I certainly will never be able to afford it.

I think I'll pass on this one, leaving the molecularly prepared offal to the rich and famous while I dine on the prime cuts they are too jaded to eat.

Besides, I'm old and the older I get, the less fussy I like my food.

For some food feeds the body and for others the soul as well. I'm fascinated and entertained by the froo froo fine dining trends and enjoy hearing about new flavor profiles and techniques. These chefs who are able to live their passions and find ways of being creative in the cut throat restaurant world are artists and cultural curators. I feel fortunate to get inspiration from them as well as from my own grandmothers.

I may never eat at one of those joints but I still can appreciate what they do.
