Black bean & corn salad

Ingredients
1 small bag frozen corn
1 can black beans, rinsed
large handful spinach, chopped
1 onion, chopped
1/2 red pepper
1 cup grape tomatoes, chopped
juice of 1/2 lime

Toppings
shredded cheddar cheese
corn chips, crushed
salsa
jalapeño peppers, chopped

Directions
Caramelize onion in a bit of olive oil. Then mix all the remaining ingredients together. Add salt and pepper to taste.

I like fresh cilantro, though, rather than using lime juice. It's really easy to grow, and you can buy organic coriander at the grocery store to plant. (Coriander is the seed, cilantro is the plant.)

Having also just read up on how good tomato is for helping out with narrowed blood vessels, I'll be doing more tomatoes in my cooking, even though I generally avoid using them as much.

Sounds good.

I have a version that is quick to make:

1 drained can or small bag of frozen corn (niblets)
2 drained cans of black-eyed peas (I used black beans instead)
1 jalapeno, diced
1 red bell pepper, diced
1 red onion, diced
3 stalks celery, diced

1/2 c. olive oil
1/3 c. red wine vinegar
1 tbls. dijon mustard
2 slices crisp bacon, crumbled (can substitute a few drops of
Liquid Smoke if you don't like or can't eat bacon)

Mix all veggies and pour dressing over top. Mix thoroughly. Top with
crumbled bacon. Serve with tortilla chips or use as a side salad.
