When Queen Elizabeth was crowned in 1953, the main dish served to hundreds at the celebratory dinner, was a chicken dish now known as "Coronation Chicken". Since the country was still under rationing from WWII, this was the most elaborate even the royal kitchen could come up with. It is a chicken salad recipe which remains on the royal menu table even today, and a favorite of the Queen. Has a dash of curry and sweetness. Is also served as sandwich filling.

I intend to try it as something different for a frequent ingredient in our house: the humble chicken!!!

(37,549 posts)Costco rotisserie chicken, some minced celery, a bit of cilantro, some Patak's curry paste, and little mango chutney, and a few tablespoons of mayo. I like throwing in golden raisins or dried cranberries.
This is delicious the second day. It never lasts past that, though.
