Just finished cooking Easter dinner

Well, everything except the stuffed mushrooms and zucchini casserole.

I wouldn’t normally have done it this way, but I was cooking Easter dinner for my brother to pick up and take to my nephew’s house (single dad, family of 5). I figured I wasn’t going to cook it twice, so 80% is already done!

They’re having glazed ham, biscuits, buttered corn, sautéed asparagus, mashed potatoes, and Watergate salad.

For my family, we’ll do the zucchini casserole and stuffed mushrooms. Rather than mashed potatoes, we’re having baked sweet potatoes.

Home alone, so chicken tikka masala for me tonight, and some form of matzoh tomorrow, I think.

Stumbled on the ancient Mayan roast pork recipe so am preparing Conchinita Pibil.
Not sure about sides. Probably some organic corn and some green beans with shredded Manchego cheese on top.
Wash it down with some Jamesons or Guinness, have a global feel.
