with the last of the leftover pork roast. The recipe I'm using calls for a lot more meat than I have, so there will be leftover tomato/onion/pepper mix.

Keeping with the theme, we're also having Moros y Cristanos (spiced black beans and rice), and if I'm really ambitious fried plantains.

I am very fond of green peppercorns..we have a peppercorn tree and I love adding sautéed green peppercorns to everything!
