What's for Dinner, Mon., Jan. 21, 2024

Burrito, using black beans, avocado, tomatoes, shishito peppers, cilantro, and fresh corn salsa. Instead of rice I'm using quinoa. Cheddar cheese. Sour cream.

Corn muffin on the side. It has cheddar and turkey bacon bits. Also jalapeno pepper.

Pomegranate kombucha.

Dessert: Square from a Tony's milk chocolate "everything" bar. Mocha decaf.

Traditional English recipe: ground beef, onions, celery, carrots, peas, a gravy, and mashed potatoes for the top.

Excellent. I'll be eating it tomorrow and probably Wednesday. Have frozen half of the meat, etc, mix, for another time.

this week it's got artichoke hearts, the last of the roasted red peppers, and some unexpectedly spicy nduja.
