What's for Dinner, Sat., Dec. 9, 2023

Minestrone with white beans. It also has green beans, and I pick out the tiniest ones at the greengrocer. Other ingredients are: plum tomatoes, carrots, zucchini, oregano, parsley, small potatoes (very few, just enough for flavor). Grated parmesan on top.

Crusty bread, warmed in the air fryer.

Pink Lady apple kombucha.

Dessert: vanilla mochi and decaf coffee.

The sweet potato I was going to use was going bad, so I substituted a honeynut squash. I used prunes and apricots because I don't like dates.

This week my favorite farmers market vendor was giving away lettuce grown in their greenhouse, so we got some, and bought a head of cauliflower and one of cabbage. So accompanying the tsimmes is a salad with the cauliflower and other vegetables.
