What's for Dinner, Wed., Nov 29, 2023

Eggplant parmesan with chicken. Lots of mozzarella and tomato sauce over the top. Chopped fresh basil, too, 'cuz I still have some going in my house.

Baby arugula salad with homemade vinaigrette of olive oil, lemon, Dijon, and a little vinegar. Cherry tomatoes (still have homegrown!), parmesan shavings, and toasted walnuts.

Ginger kombucha.

Dessert: last of the fresh raspberries over a toasted waffle with vanilla Greek yogurt. Decaf.

Classic spaghetti and meatballs. Mixed green salad with tomato, red onion and garlic croutons topped with a creamy Parmesan dressing. Garlic bread and Chianti.

Thanks! It definitely looks like food I would enjoy. I am going to show this to the RG and ask him to make up some of those dishes for me.

I grated some extra sharp cheddar, used heavy cream and butter. Nice change from turkey soup
