Chicken Plait (braid)

I know I should have put it on a pretty plate....

CHICKEN PLAIT

1 lb raw chicken - diced
4 oz chopped mushrooms
2 oz shredded cheddar
1 oz shredded parmesan
1 t dry thyme
salt + pepper
Mix all ingredients together

1 puff pastry sheet
___________________________________

Roll out pastry sheet to 12" square and place mixture evenly down the center, leaving 1" margin top and bottom.

Make diagonal cuts on either side, fold the top an bottom ends over the filling and then cover the filling with alternating strips of pastry from each side the make a plait.

Transfer to parchment lined baking sheet and brush with egg wash. (I actually use the wash as I'm putting the braid together. It helps the strips to stay in place.)

Place in 425 oven for 20 minutes
Reduce hat to 350 and cook for 30 to 40 minutes until golden an crisp.

It's just a bit creamy, but has a chew to it because of the chicken.

It's very yummy.
