Shred it, add salt, beat it down, repeat. Wait for it to ferment. Made 34 quarts and canned them yesterday.
Cabbage cutter is close to 100 years old. Turned out great. Will give some away and the rest will last at least two years.
Does anyone else do this?

10. 12-gallon crock

I had to look that up because I couldn't imagine what a 12-gallon crock would look like. In the process of doing so, I was surprised to see what a 12-gallon crock would cost if one were to buy one: about $150! And some way more!

I haven't done sauerkraut but I tried to do kimchi and failed because I gobbled up the big cabbage head when I did other recipes. I still want to do it but will have to get a new Napa.

The RG bought some beautiful fermentation seal jars so I thought I would use them to ferment green tomatoes. Here's the recipe I'm using.

Yummm, I would love to try your sauerkraut.

turkey vegetable soup with ciabatta rolls.

We're both nursing colds, so it felt like a soup night.

It was really good. My weeknight chef (son) said it was fairly easy. He's been cooking long enough that I think he's "getting into the Zen of chopping vegetables"
