Fresh cranberry salsa and spread

Okay, it is that time again. T-day is almost here, so herewith, my favourite side dish:

1 small (16 0z) bag fresh cranberries
1 whole lemon
1 whole orange
pomegranate arils (optional)
1 jalapeno or other pepper (optional)
finely chopped nuts of your choice (optional)
sugar to taste

Cut the whole lemon (peel and all) into pieces and pulse in blender or food processor to small, rough chop. Place in large mixing bowl. Do not need to clean blender or processor.

Repeat with orange, also cut into pieces, peel and all.

In small batches, pulse cranberries to small pieces, and add to mixing bowl. Scrape down blender or processor jar. Add pomegranate arils if using. Seed and finely chop pepper if using. Add sugar to taste (I use very little, because I like it really tart). Cover and allow flavours to blend for several hours or overnight (better). If using nuts, add just before serving.

Leftover salsa can be added to blender or processor with softened cream cheese to use as a dip or spread for turkey sandwiches.

I like this raw dish because of its beautiful, bright colours and tartness. A nice counterpoint to all the rich and heavy dishes, and loaded with vitamins.

years. The basic recipe (cranberries, orange, sugar) was on a bag of cranberries many years ago. I just added to it.

You will have to let me know how you like it.
