What's for Dinner, Fri. Oct. 6, 2023

It's been rainy and overcast here, and while the temperatures are good (73), it would still be nice to have soup, salad, and cornbread.

The soup is going to be roasted red pepper and tomato. The salad is romaine and red leaf mixed with the usual garden vegetables, although most are from my garden such as the tomatoes, peppers, celery, scallions, and Korean radish. Carrot. In the middle I'm putting tuna-egg salad after I toss the greens in dressing. On top, sliced avocado.

The cornbread is this "Southern Cornbread" recipe I found online that requires self-rising cornmeal. It took me two or three stores to find it but I finally did get it. In that I will add cubed Cheddar and green chiles.

Raspberry kombucha to drink.

Dessert, if I have it, will just be a mandarin and some toasted almonds.

Here in central Kentucky I have had the opposite experience with cornmeal. It took me trips to three different markets to find plain cornmeal. I currently have two bags of self rising because I misread the label Fortunately we love cornbread!

It’s been marinating since lunch. I’ll grill it along with a couple of ears of corn. The Landlady is making her special cole slaw and we have Moosehead beer.

we would go out on the boat and fish, swim, and eat/drink. Those two loved Moosehead...my sister and I called it Moosepiss behind their backs. My sis married one friend. The other one dumped me. Sis's now husband still loves that bear...not easy to find where she lives so she orders it. My hubby hates beer.

We’re not big beer drinkers. We prefer wine.

14. As it turns out I was (didn't know it then) allergic to beer...gluten allergy so it made me sick...

Looks like Italian sausage and white bean soup . Roasted red peppers, green peppers, onion, cannellini beans and potato … chicken stock and a little tomato for some added flavor.
And black olive foccacia on the side

salad and added cooked chicken and homemade (Weight Watcher friendly) ranch dressing. I had crunchy grapes for dessert. I might have a mini peanut butter cup later if I crave chocolate. I have 23 lbs to go before goal. I don't know if I ever told anyone here but I have dropped 100 lbs using WW. And with the heart issue, I have had. It probably saved my life!

It didn't happen overnight...has taken time. The turning point came in 15 when I found out I had a gluten allergy. I was hungry all the time and lived on tums. I got a blockage in 15 and they ran the test. While losing weight isn't always easy, I am metabolizing my food and that makes a big difference.
